"Goomar" Irene (a.k.a. Tweety) Bridges' Zucchini Cake

3 eggs
1 cup salad oil
2 cups sugar
2 cups raw unpeeled zucchini (grated)
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 cups unsifted flour
1 cup chopped walnuts

Oven temperature 350 degrees
Bundt Pan
1 hour or more

Beat eggs until foamy. Then sugar, oil, zucchini, spices. Mix flour and baking soda and powder in, then fold in the nuts.

Leave in pan 10 minutes, then loosen edges and shake loose, cool on rack, store in tin or wrap in foil.

Use with softened cream cheese.
